Week 11: French Bread Pizza

This week I made French bread pizza, or as my husband calls it, “The Easiest Pizza Ever.”  It really is easy, and quick.  This is usually a mid-week we-have-nothing-else-to-eat-and-need-a-quick-meal meal for us.  It’s great because we get more than one meal out of it.  One big French bread loaf is enough for 4 pizzas.  When we lived in Knoxville, I was working at the University of Tennessee and my husband was a grad student.  I had access to a toaster oven in my break room so we’d bring the leftovers with us and have fresh cooked pizza for lunch.  It was one of my favorite lunches.

You could bake your own loaf of French bread for this pizza, or do what we do and buy it from your local grocery store when it’s on sale.  We like to buy loaves from the “Oops we baked too much” section and freeze them for later use.

Cut the bread in half vertically and horizontally so you have four pizza canvasses.  That is, if you’re making all four pizzas.  Otherwise, leave half of the bread in tact and eat it however you wish.

When I’m feeling extra fancy, I rub a cut clove of garlic on the bread.

Next, top with sauce, cheese, and your favorite toppings.  Mine has spinach and cherry tomatoes.  The husband’s has pepperoni.

I cooked ours in the toaster oven, under the broiler set to 500 F, for about 6 minutes.  Make sure to keep an eye on it so it doesn’t burn.

Eat an enjoy.

This pizza is really good.  I mean, it’s French bread pizza, what’s not to like?
