Week 8: Black bean, corn, (cilantro), and red onion BBQ pizza

I must say, I really love when it’s pizza day.  If this happens during the work week, I’m really excited all day to get home and eat some pizza.  Because of our schedule, this week’s pizza didn’t happen until Saturday.  This made for a long work week.

I decided to do another barbecue pizza this week, as I wanted to use some more of the delicious bbq sauce my brother-in-law gave us.  For this pizza, I used my standard pizza crust recipe, the aforementioned bbq sauce, cheddar and mozzarella.  I then topped it with a relish I made consisting of black beans, corn, red onion, salt and pepper.

I also added cilantro to my half.  My husband is one of those weirdos who hates the stuff so he didn’t get any.

Into the oven at 475 F it went for 10 minutes.

I thought this pizza was really good.  The cilantro complemented the other flavors nicely and brought a nice, fresh taste to the pizza.  The husband just thought this was “okay.”  He’s not a big fan of southwest-type flavors and picked off most of his red onions.

    If you diced the onions up very tiny, I think I would like this one, a lot. I’ll tell Shaun you made another BBQ pizza. He’ll like that.
